of Origin) cheese.\u00a0What does this mean?<\/li>\n<li>After 12 months, each cheese is tested\u00a0and then fire-branded to become authentic <strong>Parmigiano Reggiano<\/strong>\u00a0by following the strict <strong>DOP rules<\/strong>.<\/li>\n<li>Our selections may reach over <strong>48 months of aging<\/strong>.<\/li>\n<\/ul>\n<p>This careful selection process follows the artisan rules that have been handed down over time.
